Spadù’s idea came from Calabria, Sara’s homeland, where we return every year in the summertime.
Experiencing the atmosphere of the many small establishments selling Swordfish along the streets of Scilla, we thought:
“They really pamper us there with the Swordfish.”
The sandwich is so good that people line up and wait for a long time to taste it.
So, a few years ago the idea and desire flashed across our mind to open our own place in San Benedetto del Tronto that would transfer the same taste and excitement to the atmosphere of our home.
So we began to dream…
“imagine such a place … all our own”
Such a special sandwich starts with careful research and selection of all that our peninsula can provide.
Healthy and refined ingredients in a harmony of balance between flavor and lightness.
We looked for fresh Swordfish that came only from sustainable fisheries.
With painstaking skill we process and cook it so that it becomes the tasty slice of our sandwich.
We scrupulously and carefully searched for the right bread and selected the Organic Soft Wheat Semintegral “Ciabatta” from Marche Region
A high-hydration dough characterized by the typical crispness of the crust and the melting softness of the very honeycombed crumb.
We are of the opinion that all high-quality products must necessarily be accompanied by refined seasonings.
Thus, we have selected a “provenzale” Extra Virgin Oil, one of the world’s finest Cultivars: extracted from a single type of olive tree, obtained by pressing olives harvested in a specific week of the year.
We use vegetables and greens that are strictly local, unprocessed and from controlled supply chains.
We selected a hand-picked Bronte D.O.P. green pistachio, certified with an authorization number on the packages, dried on the slopes of Etna strictly in the sun.
We use a “burrata stracciatella”, made from only Italian milk from Marche Region
We thought we would enhance our sandwiches with hand-picked oregano from Calabria Region that is vacuum-packed to keep its fragrance intact.
Fresh without freezing processes so that it ends up in the crispy embrace of a delicious sandwich becoming something unique.
